This was given to our family by a wonderful old lady whose house we purchased back in 1971. It's been a favorite of our family for years. Hope it is for yours too.
3/4 c sugar
3/4 c vinegar
2 eggs - poached until hard or hard-cooked eggs.
3 strips bacon - cooked crisp, then crumbled. Keep drippings.
1 pkg of raw spinach or any other type of salad greens you like. Including chopped green onions is a plus.
Cook sugar and vinegar over low-medium heat until sugar is dissolved. Stir frequently. Chop eggs into pieces.
With cleaned spinach in a large bowl, pour bacon drippings over leaves. Add crumbled bacon, chopped eggs. Pour hot sugar-vinegar mixture over all. Toss. Salt & pepper to taste. Serve immediately. Depending on appetites, can serve 6.
